Ingredients

  • 3 cups quinoa cooked
  • 1 block of feta cubed
  • 1/2 cup red onion chopped
  • 1 cucumber sliced
  • 1/2 cup parsley chopped
  • 1/2 cup mint chopped
  • 1/2 cup pistachios
  • 1 can chickpeas drained and rinsed
  • 1 lemon juiced
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • mix all ingredients in a large bowl and toss until fully combined
