Gluten Free Vegan Spicy Rigatoni alla Vodka

Ingredients

  • 6 oz gluten free rigatoni pasta
  • 2 tbsp dairy free butter
  • 1/2 onion chopped
  • 2 tbsp minced garlic
  • 1/2 container tomato paste
  • 1 tsp salt
  • 1/2 cup coconut cream
  • 1/4 cup vodka
  • 1/2 cup pasta water
  • 3 tbsp nutritional yeast
  • 1 tbsp red pepper flakes

Instructions

  • Cook pasta according to instructions
  • Add butter to a pan on medium heat
  • Cook onion in the butter for about 7 minutes
  • Add the garlic and cook for another 2 minutes
  • Add the tomato paste, salt and vodka and cook for another 5 minutes
  • Slowly stir in the coconut cream and pasta water until fully combined
  • Mix in nutritional yeast and red pepper flakes and let simmer on low for about 10 minutes
  • Mix pasta into sauce and top with basil and red pepper flakes
