- Mix olive oil, lime juice, honey, garlic and spices in a bowl. Add the Jalapeño slices and let sit for 10 minutes 
- Remove jalapeño slices (some seeds will remain) and marinade chicken in sauce for a few hours or overnight 
- Heat a cast-iron skillet on high for 2 minutes. cover pan in oil and add marinated chicken breasts 
- Cook on each side for around 6 minutes or until fully cooked through 
- Top with extra lime juice and jalapeño slices
