Avocado Oil Fries

Ingredients

  • 2 large russet potatoes
  • 2 tbsp avocado oil
  • 1.5 tbsp arrowroot starch
  • 1 tsp onion powder
  • 1 tsp dill chopped
  • 1 tsp parsley chopped
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup organic ketchup I use Primal Kitchen Foods

Instructions

  • Cut potatoes into strips and submerge into a bowl of water for 20 minutes
  • Rinse and dry potato strips
  • Mix all dry ingredients into a medium bowl
  • Toss potatoes with avocado oil, then slowly add in spice mixture and toss until potatoes are covered
  • Spread onto a parchment lined cookie sheet
  • Bake at 425 for 45 minutes, flipping halfway through (until crispy)
  • Add more salt if desired
  • Serve with ketchup
