Cilantro Lime Cauliflower Rice

Ingredients

  • 3 cups cauliflower rice
  • 1/3 cup white onion chopped
  • 1/3 cup cilantro chopped
  • 1 lime juiced
  • 1 tbsp olive oil
  • 1 tsp garlic salt

Instructions

  • Sauté onions in olive oil on a skillet until translucent (about 7 minutes)
  • Add cauliflower rice and cook for about 3 minutes on medium heat
  • Turn heat to high, add salt and cook for about one minute (will draw out moisture)
  • Remove from heat and mix in lime juice and cilantro while still warm
