Wash and chop all vegetables
Add chopped onion and coconut oil to a large pot on medium high heat
Cook until translucent (about 5 minutes)
Add water, broccoli, celery, carrots, and zucchini to the pot and turn to medium heat
Cover and let steam for around 20 minutes, or until all veggies can be pierced with a fork
Turn off heat and add minced garlic, mix and then cover and let sit for about 5 minutes
Transfer veggies to a blender or food processor and add the cilantro, spinach, salt and coconut milk (may have to work in batches)
Blend until the soup is a smooth, thick and creamy consistency
