Green Detox Soup

Ingredients

  • 1 head of broccoli
  • 1/2 bunch of celery
  • 2 large carrots
  • 2 zucchini
  • 1 white onion
  • 1 head of garlic
  • 2 cups of water
  • 1/2 bunch of cilantro
  • 2 cups of spinach or other leafy green
  • 1 tbs. coconut oil
  • 1 tsp celtic sea salt
  • 1 cup canned coconut milk

Instructions

  • Wash and chop all vegetables
  • Add chopped onion and coconut oil to a large pot on medium high heat
  • Cook until translucent (about 5 minutes)
  • Add water, broccoli, celery, carrots, and zucchini to the pot and turn to medium heat
  • Cover and let steam for around 20 minutes, or until all veggies can be pierced with a fork
  • Turn off heat and add minced garlic, mix and then cover and let sit for about 5 minutes
  • Transfer veggies to a blender or food processor and add the cilantro, spinach, salt and coconut milk (may have to work in batches)
  • Blend until the soup is a smooth, thick and creamy consistency
