Watermelon Mint Salad

Ingredients

  • 2 cups arugula
  • 2 cups watermelon
  • 1/4 cup mint, chopped
  • 1/2 large cucumber, chopped
  • 1/2 cup vegan feta (Violife is a good brand)
  • 2 tbsp olive oil
  • 2 tbsp balsamic
  • 1/2 lime, juiced

Instructions

  • Cut watermelon and cucumber into small chunks
  • Add arugula, watermelon, cucumber and mint to a large bowl
  • Add olive oil, balsamic, lime juice and toss
  • Top with crumbled feta
