Carrot Cake Baked Protein Oats

Ingredients

  • ¼ cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 tbsp ground flaxseed
  • 1 tbsp almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/2 cup unsweetened almond milk
  • ¼ cup finely grated carrot

Instructions

  • Preheat oven to 350°F and grease a ramekin.
  • Mix all dry ingredients in a bowl.
  • Add almond milk and stir until combined.
  • Fold in grated carrot.
  • Pour into ramekin and smooth top.
  • Bake 20–25 minutes until just set.
  • Let cool slightly and serve with desired toppings.
